Evaluation of the Mitigating Capacity of Antioxidant Extracts on the Formation of Acrylamide and HMF in Starchy Food MatricesHeating starch-rich foods at high temperatures (100-250 °C) promotes the formation of Maillard reaction products (MRPs), which can generate both positive sensory attributes and harmful compounds, including neoformed contaminants (NFCs) such as acrylamide (AA) and hydroxymethylfurfural (HMF), which are associated with health risks. To mitigate the formation of these harmful compounds for human health, it is proposed to use natural antioxidants, especially polyphenols, from extracts of Chilean sources such as Durvillaea incurvata and Ugni molinae. The objective is to simultaneously reduce the formation of AA and HMF in starchy foods like potato chips and crackers, while preserving sensory attributes and improving antioxidant capacity. The project includes obtaining optimized extracts through ultrasound-assisted extraction (USAE) and evaluating their effectiveness in final products, aiming to develop sustainable and scalable strategies to enhance food safety without compromising quality. Formulation of Quinoa-Based Cookies with Reduced Acrylamide and HMF Content Using Antioxidant ExtractsPrimarily the Maillard reaction (MR) in food processing at high temperatures generates toxic compounds, such as acrylamide (AA) and hydroxymethylfurfural (HMF), which are neurotoxic and potentially carcinogenic. This has raised concerns about food safety and public health. To address these concerns, the development of gluten-free cookies based on quinoa, enriched with various antioxidant extracts rich in polyphenols, is proposed. This project aims to create a healthy and safe product aligned with the "clean label" trend and formulated for individuals with celiac disease. The antioxidant extracts help reduce the formation of toxic compounds such as AA and HMF, while maintaining sensory properties and increasing the antioxidant capacity of the cookies treated with the extracts. The effectiveness of the antioxidant extracts will be evaluated at different concentrations, analyzing their chemical safety. Ultimately, this research is expected to provide an innovative solution for the development of baked products, improving their safety and quality. Esto ha suscitado preocupaciones sobre la inocuidad alimentaria y la salud pública.
